Ingredients for Apple Cinnamon Baked Oat Bites:
- 4 cups (360 g) oats (quick or rolled), gluten-free if necessary
- 3 tablespoons (21 g) flaxseed meal (ground flaxseed)
- 1 tablespoon (12 g) baking powder
- 2 teaspoons (4 g) cinnamon, more if desired
- 1 teaspoon (2 g) nutmeg
- 1/2 teaspoon (3 g) salt (for 12 months +)
- 2 cups (280 ml) milk
- 3 eggs
- 1 cup (240 g) unsweetened applesauce
- 1 tablespoon (15 ml) vanilla extract
- 2 cups (~330 g) apples, peeled and diced (3-4 large apples)
Directions for Making Apple Cinnamon Baked Oat Bites:
- Preheat oven to 350°F (180°C).
- Grease 24 muffin tins, or line with cupcake liners.
- Peel and dice the apples, set aside.
- In a large bowl whisk the wet ingredients until mixed.
- Add dry ingredients to the bowl and stir well.
- Fold in apples last.
- Spoon mixture into each muffin tin, fill to to top.
- Bake 25-30 minutes until top is crisp and middle is set.
Storage: Can be kept in the fridge for up to 5 days and up to 3 months in the freezer.
Suitable from: 6 months + as long as allergens (eggs and dairy) have been introduced and salt is omitted.
How to offer: With palmar grasp (around 6-8 months), offer whole or cut in half for baby to easily hold on to.
With pincer grasp (around 9 months +), offer whole or cut into bite-size pieces for them to pick up.
